Mascarpone Cream for Berries & Choc Duo

There’s nothing like the combination of berries and chocolate - simple yet so effective when decorating a cake! When in doubt, adding fruit is always a good idea.
For this cake, @ultimateomnoms used our freeze-dried raspberry powder to create the most divine mascarpone cream. She admits to taste-testing a lot while decorating, who wouldn’t? The tartness of the raspberries pairs beautifully with the sweetness of the chocolate cake.
Mascarpone Cream Recipe
Ingredients:
• 300 ml fresh cream (cold)
• 30 g icing sugar
• 250 g mascarpone cheese (room temperature)
• 1 tsp vanilla extract
• 2-3 tsp freeze-dried fruit powder
Instructions:
1. Whip fresh cream with mascarpone until combined.
2. Add vanilla extract, icing sugar, and fruit powder until you reach the desired stiffness for icing.
This mascarpone cream is not just delicious, it also gives the frosting a beautiful soft pink hue, perfect for any dessert!
